How to make Chikuzenni

Ingredients for 3-4 people
-chicken thigh (300g)
-burdock (1)
-carrot (1)
-kidney beans (10)
-dried Shiitake mushrooms (4-5)
**Put them in a small bowl and reconstitute with some water before start cooking.**
-konjac (200g)
soup
-water (2 cups)
**Use the Shiitake soup from above and add water if it’s smaller than 2 cups.**
-sake (50cc)
-sugar (3tbs)
-soy sauce (4tbs)
-cooking oil
Wash off the burdock skin and cut the burdock into bite-size pieces, then put them into water.
Cut konjac into bite-size pieces (in this picture we are using round shaped one) and boil them for about 2 minutes.
Cut chicken, carrot and reconstituted Shiitake mushrooms into bite-size pieces.
Boil kidney beans and cut them 4-5cm length.
Place some cooking oil in the pan and stir-fry chicken.

Add burdock, carrot, shiitake mushroom, konjac and stir-fry them.

Add sake, cover the pan with lid and simmer for 1-2 minutes.

Add 2 cups of water, sugar, soy sauce and place the lid (Otoshibuta: the lid resting directly on the food) and keep simmering for about 30 minutes.

It’s ready when the soup is gone.

Place it in a dish and decorate with kidney beans. It’s ready!

Whenever you reconstitute dried Shiitake mushrooms, do not throw away the soup (water)! This can be used as Dashi and it tastes (and smells) great! You may not be able to find konjac or burdock in your area. Then, just forget about it. You can simply arrange the recipe with more common and handy ingredients from your local area. Be creative and enjoy your cooking!!

I've" always avoided buying burdock because I didn't see any simple recipe to use it in, but I like this one. I may give it a try.
How long can you store burdock in the refrigerator ? one or more weeks, like carrots ?

Great recipe! But those are green beans (or string beans) – not kidney beans.

If the burdock you bought is covered by soil, wrap it with newspaper and store it in a cold place. (No need to be in a fridge.) If the soil is off and washed before sold, put it into a plastic bag and store it in a fridge. How long does it last? Hmmm…while it seems OK it's OK. haha! While it's still hard and it contains some moisture I think it's OK. Sorry if my reply doesn't really make sense to you. >_<

Oh really? Thank you for pointing that out. I have so many unfamiliar words and this one also. I looked up the word in a dictionary and it said kidney beans. Green beans are easier to remember.

Kidney beans have the same shape as kidneys (腎臓)
