Whenever you reconstitute dried Shiitake mushrooms, do not throw away the soup (water)! This can be used as Dashi and it tastes (and smells) great! You may not be able to find konjac or burdock in your area. Then, just forget about it. You can simply arrange the recipe with more common and handy ingredients from your local area. Wow! It looks delicious! Great photos, too :)

  2. Walter Said,

I've" always avoided buying burdock because I didn't see any simple recipe to use it in, but I like this one. I may give it a try.
How long can you store burdock in the refrigerator ? one or more weeks, like carrots ?
    Thanks for posting this.

  3. delightedlaura Said,

Kirin, thanks for sharing this! It looks delicious. I'm definitely going to try it!

  4. ben Said,

Great recipe! But those are green beans (or string beans) – not kidney beans.

  5. kirin Said,

If the burdock you bought is covered by soil, wrap it with newspaper and store it in a cold place. (No need to be in a fridge.) If the soil is off and washed before sold, put it into a plastic bag and store it in a fridge. How long does it last? Hmmm…while it seems OK it's OK. haha! While it's still hard and it contains some moisture I think it's OK. Sorry if my reply doesn't really make sense to you. >_<

  6. kirin Said,

Oh really? Thank you for pointing that out. I have so many unfamiliar words and this one also. I looked up the word in a dictionary and it said kidney beans. Green beans are easier to remember.

  7. kiw Said,

Kidney beans have the same shape as kidneys (腎臓) ;)

  8. kirin Said,

    Thank you. ^__^
