Yummy chicken wing stick simmered in soy sauce

Today’s recipe is chicken wing stick cooked in Japanese way.

Ingredients for 4 people
-12 chicken wing sticks
-4 boiled eggs
-2 cups of Dashi
-2tbs of suger
-2tbs of Mirin (If you cannot get Mirin, just adjust the taste with a little more sugar.) *Picture of Mirin is on this post.
-3tbs of cooking wine
-3tbs of soy sauce.

First of all, boil chicken wing sticks casually. (This step is to get rid of the smell of meat.)

Throw away the water after you boiled chicken wings, and put Dashi and all the condiments into a pot and boil it.

Put the chicken wing sticks into a pan.

Make a cover from aluminum foil and place on the chicken and simmer for 20 minutes over medium heat.

Add boiled eggs.

Keep simmering for 10 minutes.

It’s good with a hint of Japanese mustard.

    Clarification on two questions:

    1. Do we throw the water out after boiling the chicken?
    2. How long should we boil the eggs for first?

    Thank you for asking those questions. You're right, that part was not clear, and so I amended it.

    So…for 1 yes, please throw away the water after you boil the chicken.
    2, just make some boiling eggs. In my kitchen I usually boil like 12 minutes because if it's less, it's too soft to take off the eggshell.
